How to be a Barista?

 
Until now, there is no government certified official license for Barista. But Korea Coffee Association runs a program.
 
 
 
There are 2 levels,
Level 1 test
Level 1 test requires Level 2 license as a prerequisite for Writing test for level 1.
50 questions are in the test which is among Coffee history, roasting, extraction and Green tea for 60 minutes.

Next step for level 1 test is practice for 20 minutes, 10 minutes for preparation and the other 10 minutes for making. 2 kinds of coffee and 2 kinds of coffee machines is offered, Applicant can choose 1 of them and can setting coffee machine as he/she wants. 4 cups of espresso coffee must be made with applicant's ecaxt explanation of own flavor to refrees.
Another 4 cups of Cappuccino with same decoration.


 
Level 2 test

Level 2 license is easier than level 1.
It is the same that 50 questions writing test must be passed.
practise test is 15 minute long, 5 minute for preparation and 10 minutes for evaluation.
Refree's evaluation includes applicant's attituds, Espresso, Cappuccino and service skill.

Coffee is generally believed to have more health risks than benefits. But it is not true. Coffee is,  first of all, good for mental condition. It helps refresh. Caffeine acts as an acute antidepressant. 

secondly, many studies tells that coffee can defend or reduce the risk of Alzheimer disease, Parkinson's disease.
It is because coffee contains anti-oxidant which prevents free radicals which calls cell damage.
Finally, habitual coffee taking improves vascular function.

Too much coffee can cause very unpleasant feeling. Coffee works as a interferant for absorbing iron in the blood. If iron is bothered to be absorbed into blood, It sometimes give dangerous situation especially for fragnant mother.

The 3 world best coffee are Jamaica Blue Mountain, Hawaiian Kona and Yemen Mocha.

First, Jamaica Blue Mountain.
 

 
 
Jamaica Blue Mountain is coffee produced in Blue Mountain region that is East of Jamaica.
It got a nickname 'King of coffee', known as England royal family and Queen Elizabeth enjoyed the coffee.
 
Cool weather, frequent fog, a lot of rain fall and land that absorbs the water are perfect condition for growing coffee beans.
 
 
80% of Jamaica Blue Mountain is exported to Japan monopolistically, and the rest 20% is divided to the world wide.
 
SO, it is hard to taste in Korea and most of the Jamaica Blue Mountain which is sold in department store or famous brand is just scent additive.
 
Maybe the scarcity value attracts us more:)
 
 
Second, Hawaiian Kona.
 

 
 
Kona is planted since 1825 in Hawaii. Hawaii is the only area that can plant coffee in the States.
Hawaii is composed eight big islands and 120 of small islands, and Kona is coffee planted in Kona area, West of the biggest island in Hawaii.
 

Coffee beans of Kona is harvested one granule by one completely. And although being planted in low altitude relatively, regular rain and moderate temperature help Kona coffee grow well. So it has great quality such as being planted at high altitude.
 
Kona has sweet, sour and fresh flavors and is evaluated as soft and harmonious coffee. Kona is so soft that some people who enjoy strong coffee can think Kona is so light. 
 
 
Third, Yemen Mocha.




The first coffee in the world is produced in Yemen. There is Mocha port in Yemen, so all of the coffee passing through Mocha port became to be called as Mocha.

Did you happen to think over when Korea have faced the coffee?
 It is heard that Coffee borrowed Korean sound, GABI. 19th Century was most dynamic era of the Chosun Dynasty since many strong countries look over the peninsula seeking way to infiltrate in. The first coffee seemed to come in together with the people who were around in Incheon city in 1986.

 At that time, Incheon was so busy with a lot of people since the first station of the first laid railway in Korea.(between Noryangjin and Jemulpo) together with fact that this port was the very first open port to the foreigners. Before the railway, It is said it took half a day to go to Hanseong(old name of Seoul city) by a ride on a small horse. It is natural for the foreigners who arrived in the port to stay in Incheon. Automatically, the first hotel was built in Incheon called “Daebul Hotel”. This Japanese capital based hotel is allegedly built in Western style, 3 story-building with 11 Bed equipped rooms and 240 Japanese styled straw-thatched DADMI room. They recept visitors with English.

There are no firm evidence the hotel sold Coffee, but people believe firmly the hotel has. Now we found the very first coffee-shop in Korea, Daebul Hotel.




Some clues on the memorandum of Mr. Apenzeller who stayed in 1985 for a week says.
“There are No American, European Hotel but I heard there are Japanese operating Hotel. I called a Errand man to have him bring my luggage. My room was quite wide and comfort. … As soon as I take a seat in the restaurant, well-cooked western food was immediately served.

Well-cooked western style food does not directly mean that coffee was served. But we can guess that the food includes coffee. Very high possibility of coffee-selling.
 Mrs. Sontag who was born in France operated a hotel named Sontag Hotel, where many historic incidents were happened. She was allegedly speaking Germany, English and quite fluent Korean. Mrs. Sontag later met Myungseonghwanhoo, the last queen of Chosun Dynasty to chat on history, music, painting and foods.




 Sontag Hotel was located in Jungdong. Until some years ago, this Sontag Hotel was believed the first coffee selling place before the Daebul Hotel. Still the importance of Sontag Hotel is quite big when it comes to History of coffee. Thanks to her close relation with the Royal Family, Mrs. Sontag grew to be a big power in diplomatic field. Many foreign envoys, ambassadors gathered to this hotel to discuss, gather information. The Sontag Hotel became a market place of diplomatic market.


Kojong, the husband of Myungseonghwanhoo is famous as coffee mania, too.

Kinds of Coffee

Maybe some of you guys might not distinguish some kinds of coffee, especially men.
Lets's know coffee exactly and enjoy flavor of each of them!

1 Espresso
   Espresso




 
Espresso is coffee enjoying aftertaste after eating original, undiluted coffee shot.

2 Americano
   Espresso, Hot water

 


Americano is diluting espresso adding hot water. According to your taste, you can control the mount of water and the strength of coffee. And various syrups could be added like sugar syrup or hazelnut syrup.


3 Caffe Latte
   Espresso, Steamed milk



Caffe latte is compound of espresso and milk. The feature of this is smooth and flavor and aromatic fragrance. Soft form which is made with milk will add the caffe lattee' flavor.


4 Cappuccino
    Espresso, Steamed milk, milk form

 
 
Cappuccino is harmony of milk and milk form.
It is improtant to make the proportion espresso:milk:milk form into 1:2:3. So Cappuccino is more stronger than Caffe latte. When you want to eat strong coffee smoothly, choose cappuccino with cinnamon powder!

5 Caffe Mocha
   Espresso, Chocolate syrup, Steamed milk, Whipping cream

 


The characteristic of Caffe Mocha is sweet and soft. First of all, chocolate syrup and espresso should be mixed well. And pour milk. This is the basic step. When you want more sweet, whipping cream is put on the coffee with chocolate syrup and powder.

6 Caffe Vienna
   Espresso, Hot water, Whipping cream


Caffe vienna is putting whipping cream on americano. You will eat americano after eating cream, so mabye you may feel more bitter. So before putting whipping cream, melting sugar in americano is better.

 SBB railways debuts starbucks' first on-board concept store





Starbucks was born in Seattle and became the most famous coffee brand over the world.
Starbucks appeals not only its flavor, quality of coffee but also the comfort mood of the stores.


 
By the way, starbucks launch a special marketing!
It is collaboration with SBB which is train corporation in Switzerland.
Starbucks store go into a train. That is movable coffee shop for the first time!
So people can enjoying Starbucks during their train trip.


 
It looks like ordinary Starbucks we can easily see.


 
The purpose of the collaboration is for travelers' sweet pleasure with Starbucks coffee.
 
This plan was produced by Switzerland designer and Starbucks headquarter, and they intended not to damage Starbucks original mood.
 
 
 
People have a table number and can order in their table, getting help from employees.


 
Also, one more mobile Starbucks is going to enter Geneva airport's tram.

Bravo! Instant Coffee

Especially My Daddy's Admiration to Maxim Stick Coffee

Recently, I had quite many time talked with my father since my father listened to me when it comes to the topics are related my classes.
I confessed my lack of topic sources on my blog of coffee, and my father laughed and started to spreading out his own philosophy on coffee which was really biased to his own taste.
Followings are my father’s opinion;

“Coffee is a really wonderful material.

It sometimes is a remedy when I set up a complicated documents. It sometimes gives me a minute of rest. I can hardly agree that Coffee is no good especially for stomach condition. Normally, I take 6~8 cups of sticked coffee a working day, exactly to say, Yellow Maxim Stick Coffee. I almost never suffered stomach problem because of these. I cannot agree it is no good to deep sleep, either. Because I have experienced coffee drinking sleeping situation a lot of times after late breakfast usually on Sundays. My family seems to be never able to understand how a coffee drinking person can sleep while drinking coffee. It is just a prejudice!



Why I became an instant coffee lover?

Yes, it has been quite long time to be like this. When I was roughly 20 years old, I think I might have started to take this instant coffee. At that time, instant coffee was introduced by Dongseo Food company with a shape of flat red rectangular package which looks like Ramyeon-soup pack. It was not granules but like brown flavor mixed with coffee, sugar and dried cream. In a paper cup, soar some hot water in and tear out one side of red rectangular package and pour it in and fold the vinyl package 2 or 3 times to instantly make a stirring stick. After those small labor, instant coffee gives me a time of enjoying of my own relaxation. Isn’t it wonderful?

Many times of repackaging maybe where maybe reflecting an idea for customer’s needs of stirring stick, the recent model of coffee package was introduced. Long plastic package which does not require user’s folding few time to make stirring stick!

This wonderful instant coffee not only gives me a convenience of taking coffee where coffee is almost impossible but also provides me a time of break.

Coffee ventilate and refresh my feeling and changes my attitude to a certain job—giving me a new position to see the job at a different angle, sometimes, allowing to solve it quite easily. Secondly, I really love the taste of mixed instant coffee. Since I travel abroad after the age of 28 years old, for more than 20 years I cannot but think that the best coffee taste is Korean made maxim coffee. Comparing tastes en between, I can swear the yellow Maxim is the best. The red Maxim is a bit strong. I cannot remember where I met the news that Korean instant coffee won Grand-Prix in a blind test, not in Korea but in a foreign country, not sure where.

Am I poisoned, addicted to instant coffee? Maybe! The final reason why I like is that the advertising women models have always been my favorites. It is another important reason that I addicted to the Maxim instant coffee at all.”

The origin of Coffee


Coffee has thousands of history but its origin is uncertain.
 There are two of the representative origins.


 
1 Omar legend



In 1258 Arabia, Sheik Omar was so smart that became a trial chief. One day, Omar went to Mocha village according to his teacher's will and took care of many people and cured them, based on his knowledge. Then he became to cure a princess of the village and fell in love with her. So Omar aroused king's anger and banished to a desert. He was so as tired as almost died. At that time, Omar saw birds eat some fruits like cherry so also ate them. And he felt energy and revived, so came back to Mocha. Omar spread that berry and appreciated again.


2 Kaldi legend



B.C.6-7C, Kaldi was a shepherd in Abissinia, now Ethiopia. Once, he was very tired of goats being in extremely excited and running. He founed it was because of purple fruits that goats ate. So he showed those to monk of his village. The monk said that is devil's fruits and burned out, But from the fruits that was in fire, people felt calm. And also water mixed with the burnt fruits made people vibrant. So the water was named "Kaffa" which means activate in Arabian.



 
The ingredient that the coffee cherry have is caffeine.
 Omar and Kaldi ate the coffee berries and caffeine.

Ethiopia Coffee Ceremony


In Ethiopia, coffee is not a simple drink, but tradition that Ethiopian have pride.
 
 
 
 
Coffee is food for survival and holy present to God. So they go through a ritual when after they have a meal,pray or greet visitors as coffee ceremony.
 
They lay Ketma leaves on broad ground and wood tabel(Rekeot) where cups of coffee called 'Cini' are on the Ketma.

 
 
Women conduct the ceremony, wearing traditional clothes 'Netella'.
 
 
 
They fry coffee beans on furnace, crush and boil them with water so make coffee.
 
 
 
And treating three cups of coffee is manners when they do ceremony.
First cup means Flavor and is called 'Abol'.
Second cup means Happiness and is called 'Hueletanya'.
And Third cup means Bless and is called 'Bereka'.
